You will be picked up from your hotel and driven to your hosts’ residence. Your hosts will serve you a welcome drink as they acquaint you with the cooking and culture of Pondicherry. The traditional cuisine of Pondicherry is not just a fusion of French and Tamil cuisine but was also cross-pollinated by the cooking of another French colony, Vietnam (or Indo-China as it was called then). There were extensive trade and military links between Pondicherry and Vietnam that led to these culinary influences that are visible even today.
