You'll arrive at Riad Andallaspa, a traditional 19-room riad in the heart of Marrakech's Medina, where your host will welcome you into the kitchen with a cup of mint tea to start. Together, you'll begin by preparing a trio of traditional Moroccan salads and warm homemade khobz bread — a relaxed, hands-on starter that eases you into Moroccan cooking technique before the main event. Next, your host will guide you step-by-step through building a traditional Moroccan tagine from scratch: blending the spices (ginger, saffron, preserved lemon, olives), layering the ingredients, and learning the slow-cooking method passed down through generations.
