The starting point for your class is Liguria, the region of the city of Genoa. This city created one of the most famous cold sauces in the world, pesto alla Genovese (Basil pesto). Forget about the food processor! Your chef instructor will teach only the most authentic techniques during class, and for pesto that includes a mortar and pestle.
