Kick off with ivory sheets of freshly pulled yuba tofu, crafted with pure water drawn from a thousand-year-old underground aquifer. Step up to the knife block that’s lasted four centuries since the market began, where a veteran shokunin slices razor-thin cuts of ruby-red tuna and coral-orange salmon sashimi that glide down like silk.

Next comes a golden pocket of Ōmi beef croquette—the holy grail of prized marbled wagyu with a crunchy panko crust and a melt-in-your-mouth interior. We won’t reveal all 13+ tastings, but consider this your warning: come hungry.
