After exploring the groves, you'll return to the frantoio for a guided sensory tasting across the estate's different oil varieties — each a portrait of the Salento terroir — paired with taralli and local products. Your experience starts at the frantoio with a guided tour of the working olive oil mill. Your host will explain the full production cycle — cold extraction, centrifuge technology, nitrogen-sealed stainless steel storage — and how the estate has achieved a completely zero-waste process since 2014, running entirely on solar power. You'll then head out to the estate's olive groves, approximately 1.5 km away, set in the coastal landscape of Ugento between the Ionian Sea and the Salento countryside.
