This isn't a chocolate demonstration — you make the chocolate yourself. Begin beside living cacao trees, then work through the bean-to-bar process yourself: roasting, cracking, winnowing, grinding, refining, tempering and moulding locally grown Caribbean cacao. You'll taste cacao at different stages, learn how fruit becomes chocolate, and leave with a bar you've made yourself.
