Speck is a dry-cured, smoked pork aged between six months and two years, infused with a blend of spices that give it its distinctive, savory flavor. It’s often served with traditional breads and pickled cucumbers, making it a true taste of the region. Bauernschinken is a cooked ham seasoned with the same spice blend as speck, offering a unique and flavorful cold cut that perfectly complements the local culinary tradition.

Next, we’ll move to another local favorite where tradition meets flavor. Bolzano is also renowned for its bread, especially Laugenbrot and Brezen. Laugenbrot is made by dipping bread rolls in a lye solution before baking and is sometimes filled with cheese. The region is also famous for its delicious desserts. In a renowned Konditorei, you’ll enjoy the classic strudel, one of the area’s most celebrated treats. This pastry is made from a thin sheet of dough rolled around a flavorful filling and baked to perfection. Made with the incredible variety of local apples, it is a true delicacy that delights every bite.
