Few cities have influenced a nation's cooking quite like Lima. For nearly five centuries, ships arriving at the Port of Callao brought ingredients, techniques and traditions from across the world. Indigenous knowledge from the Andes and Amazon met Spanish colonial recipes, African ingenuity, Chinese wok cooking and Japanese precision, giving birth to criollo cuisine - the culinary identity that continues to shape Peru today.
Before we get started, our tour reflects the local cuisine and the limitations of traditional eateries mean we unfortunately cannot cater for every dietary restriction. Here's an honest appraisal so nobody is disappointed:

Every Limeño knows that great food starts at the market.
Our first stop is Mercado San José, where traders have been feeding the neighbourhood for generations. Among overflowing fruit stalls and family-run counters, breakfast begins with pan con jamón del país, thick slices of lightly smoked country ham tucked into crusty bread. Alongside comes one of Peru's most elegant creations: causa limeña. Built from silky yellow potatoes seasoned with chilli and lime, it's a reminder that Peru's greatest culinary treasure may well be the humble potato, with more than 5,000 native varieties still growing across the country.

With more than 2,400 kilometres of Pacific coastline, seafood is written into the city’s DNA. We'll sit down to fragrant arroz de mariscos, where rice absorbs the rich flavours of Peru's coastal waters, before trying the dish that changed how the world thinks about Peruvian food - ceviche. Fresh fish cured in vibrant citrus moments before serving delivers bright, clean flavours that have made Lima one of the world's seafood capitals. As we continue through the neighbourhood, bubbling oil signals another local favourite. Crisp yuquitas emerge golden from the fryer, while papas rellenas reveal richly seasoned fillings beneath delicate potato shells, finished with vibrant sarsa criolla, the sharp onion salsa that appears beside countless Peruvian classics.

We'll finish where every great food city should - with the classics. Inside a century-old eatery, tradition still takes pride of place. Raise a perfectly shaken pisco sour before tucking into creamy ají de gallina, one of Peru's defining comfort foods, alongside fragrant tamal verde wrapped in banana leaves. Finally come picarones - golden rings of pumpkin and sweet potato dough drizzled with rich chancaca syrup, a colonial-era dessert that's been satisfying Lima's sweet tooth for centuries.
