As the sun starts to set over Puerto Vallarta, you will step into Yerba Mala Restaurant for two and a half hours of grinding, blending, and tasting your way through Mexico's most underrated culinary tradition: the salsa. This is not a demonstration. You will work with your hands from the first minute — using a centuries-old molcajete, a blender, and fresh seasonal ingredients to create five distinct salsas, each with its own technique, history, and flavor profile.
